Gingerbread Cookies








As a christmas tradition, my family always bake gingerbread cookies on the first Sunday in advent, and this year we did it once again (duh, it's called a tradition for a reason..). As I love gingerbread cookies for christmas I thought I would share the recipe we used, so that you can make them too, because they are honestly delicious! Keep in mind that the batter should be left in the fridge over night and that it makes for quite a lot of cookies so a fair few hours will be required, but I recommend gathering friends and family for a bake-day - It can be a lot of fun, especially afterwards if you decorate them :)


You will need:
2 eggs
2 1/2 dl of sugar
250 gr of dark syrup
125 gr of butter
1/2 tsp with pepper
1/2 tsp with ginger 
1/2 tsp with cinnamon
1/2 tsp with cloves
1/2 tsp with harts horn/powder of ammonium bicarbonate
About 600 gr of flour 

How to:
1. Whisk the eggs and sugar until it is fluffy (like eggnog).
2. Melt the syrup and the butter in a large sauce pan, then leave to cool.
3. Mix all the dry ingredients and add to the sauce pan with the butter and syrup.
Make sure to mix it all thoroughly.
4. Leave to cool in the fridge overnight.

After a night in the fridge...
5. From your batter, take appropriate sized pieces (they shouldn't be too big because that makes it harder to work with) and start rolling it flat on a floured surface with a rolling pin. 
6. When you have the desired thickness of the batter you can find your "cookie cutters"/shapes and create all kinds of nice gingerbread men/women/animals/stars/hearts. (Remember that they get crispier the thinner they are)
7. Now, just put them on a baking tray covered with grease proof paper and in the oven at 200 °C for about 10 minutes. (Leave them for longer or shorter depending on how crispy and golden you want them, I prefer mine quite crispy and thin )
